This recipe, "Drunken Chicken" or "Beer Can Chicken" is a non-alcoholic recipe introduced to me by my Tennessee friend Jack Crumpton, and his brother Chris. This recipe make one juicy, flavorful chicken. Some folks use a can of coke, or ginger ale instead of beer. It's only used for moisture and flavor.

Let me be clear, Carl is a very Christian Man from the "Old School". He doesn't drink or smoke, and has raised his kids to follow his lead. He lives on top of a mountain in Rockvale/Eagleville Tennessee, where the night skies are full of stars .. close to God. So when I recommended this extremely popular recipe, Carl said .. "NO. I'll not have beer used with my seasoning". But after he realized the beer only added flavor and no alcohol, he said OK .. 7 years later.

You start with a fresh, whole chicken. Wash and remove the "giblets". Rub Carl's Seasoning all over the bird. Take a can of beer (some folks use Coca-Cola), discard (or drink) about half the beer. Insert the can, open side up, into the cavity. Place the bird, butt and legs downward using the three points (butt, and both legs) to balance the bird without using any of those fancy beer can holders.

Roast your chicken over charcoal, and eat!
